Japanese Curry Pork (咖哩豬腩肉, Gaa3 Lei1 Zyu1 Naam5 Juk6)

This is a very simple curry dish to cook due to the use premade Japanese curry cubes. There are multiple brands of prepared curry sauces, I happen to use S&B brand, but this is an easy way to make a curry dish since all you add is water to make the sauce. The premade curry cubes range from mild to extra hot, but to be honest, there’s no heat whatsoever to the cubes, even the extra hot version.

Ingredients
2 lb.
1 kg.
Pork belly (with skin) meat (豬腩肉, zyu1 naam5 juk6), cut into 2-inch (5 cm.) pieces
½ lb.
250 g.
Snow peas (荷蘭豆, ho4 laan4 dau6)

Carrots (紅蘿蔔, hung4 lo4 baak6), cut into ½-inch (15 mm.) diagonal pieces

Red potatoes (, syu4), halved and cut into ½-inch (15 mm.) pieces

Sauce Ingredients

One-half package S&B brand curry sauce mix (咖哩, gaa3 lei1) or equivalent – 4 cubes
3 cups
750 ml.
Water

S&B Brand Curry Sauce Mix
(咖哩, gaa3 lei1)

  1. Wash and remove the string from the snow peas by holding the snow pea in one hand, and pinching one end and pulling the end the length of the snow pea with the other.
  2. Wash, clean, and cut the red potatoes in half. Cut each potato half into ½-inch (15 mm.) pieces and place the pieces into a bowl of water to keep them from browning.
  3. Cut the pork belly meat into 2-inch (5 cm.) pieces, keeping the skin attached. Put the pork into the Dutch oven.
  4. Wash and cut the carrot into ½-inch pieces on the diagonal, and place into the Dutch oven.
  5. Open and set aside one-half the curry mix package - four cubes. Measure out the water for the sauce and place into the Dutch oven.
  6. Heat the Dutch oven uncovered over high heat until the contents boil. Reduce the heat to low, cover the Dutch oven, and simmer for 30 minutes.
  7. Drain the water from the bowl with the potatoes. Uncover the Dutch oven, add the potatoes, and increase the heat to high to bring the contents to a boil. Cover the Dutch oven, reduce the heat to low, and simmer for another 10 minutes.
  8. Uncover and remove the Dutch oven from the heat, add the curry sauce cubes, and stir to dissolve. Add the snow peas and increase the heat to high to bring the contents to a boil. Cover the Dutch oven, reduce the heat to low, and simmer for another 5 minutes. Put the cooked ingredients into a serving dish and serve with steamed rice.
