Curry Scrambled Eggs with Avocado (咖哩粉鱷梨炒蛋, Gaa3 Lei1 Fan2 Ngok6 Lei4 Caau2 Daan6)

Madras brand curry powder is a staple in my and, I suspect, in many Chinese-American pantries. Adding curry powder to the dish is a great way to spice up scrambled eggs. I happen to have some avocado, so I also added that to the eggs as a topping to make a great breakfast. To make fluffy scrambled eggs, start by heating a cold pan or wok over medium-low to medium heat, pouring in the liquid egg solution while the pan heats up. As the eggs set, move the cooked eggs toward the center of the pan, allowing the remaining liquid eggs to be cooked in the pan. Repeat this process until no liquid remains. The dish is done when the eggs are fluffy and still look a little wet, but are not totally dry.

Eggs (雞蛋, gai1 daan6), scrambled
3 Tbs.
45 ml.
Milk (牛奶, ngau4 naai5)
½ Tbs.
7.5 ml.
Sun brand Madras Curry Powder (马德拉斯咖喱粉, maa5 dak1 laai1 si1 gaa3 lei1 fan2) or equivalent
½ tsp.
2.5 ml.
Salt (, jim4)
½ tsp.
2.5 ml.
Ground white pepper (白胡, baak6 wu4 ziu1)
1 tsp.
5 ml.
Sesame oil (麻油, maa4 jau4)

Avocado (鱷梨, ngok6 lei4), diced into ½-inch (15 mm.) pieces

Sun Brand Madras Curry Powder
(马德拉斯咖喱粉,
maa5 dak1 laai1 si1 gaa3 lei1 fan2)
Instructions
  1. Take the eggs out of the refrigerator at least one hour before cooking.
  2. Add the milk, Sun brand Madras Curry Powder or equivalent, salt, ground white pepper, and sesame oil to a large bowl. Mix the ingredients together before breaking the eggs into the bowl and scrambling them together with the other ingredients.
  3. Wash the avocado and cut in half. Dice one-half of the avocado into ½-inch (15 mm.) pieces and set aside. 
  4. Heat a wok or pan over medium-low to medium heat and before adding oil. Add the scrambled eggs to the pan while it is heating up. Before a skin forms on the bottom of the pan, use a spatula to move the cooked eggs towards the center of the pan allowing more of the liquid eggs in the pan to cook. Repeat this process until no liquid remains. The dish is done when the eggs are fluffy and still look a little wet, but are not totally dry. Turn off and remove the pan from the heat.
  5. Put the cooked eggs into a serving dish and top with the avocado pieces before serving.
