Garlic Pork Fried Rice (蒜豬肉炒飯, Syun3 Zyu1 Juk6 Caau2 Faan6)

Fried rice means leftovers and a tasty quick cooking dish. The rice from last night’s dinner has been in the refrigerator overnight and the pork from the Grilled Teriyaki Ribeye Pork Chops, Grilled Curry Pork Chops (燒烤咖哩豬排, Siu1 Haau1 Gaa3 Lei1 Zyu1 Paai4), or Asian-Brined Smoked Pork Chops is cut up into bite sized pieces. If you’re a garlic lover, you can always add more sliced garlic to the dish to satisfy your tastes. Finish the dish with oyster sauce and sesame oil.

Ingredients
2 cups

Leftover rice (, faan6)

Ground white pepper (白胡椒, baak6 wu4 ziu1)

Leftover pork meat (雞肉, gai1 juk6), cut into 1-inch (2.5 cm.) pieces

Green onions (, cung1), cut into ¼-inch (7.5 mm.) pieces

Lee Kum Kee brand Premium Oyster Flavored Sauce (蠔油, hou4 jau4) or equivalent

Premium Oyster
Flavored Sauce
(蠔油, hou4 jau4)
  1. Take the eggs and the leftover rice and pork out of the refrigerator at least one hour before cooking. Break up any clumps of rice, ideally you want to have each rice grain separated, and add the ground white pepper.
  2. Use the leftover pork from the Grilled Teriyaki Ribeye Pork Chops, Grilled Curry Pork Chops (燒烤咖哩豬排, Siu1 Haau1 Gaa3 Lei1 Zyu1 Paai4), or Asian-Brined Smoked Pork Chops recipes, and cut the pork into 1-inch (2.5 cm.) pieces.
  3. Cut the garlic cloves into thin pieces. Use more garlic if you’re a garlic lover.
  4. Wash and cut the green onion into ¼-inch (7.5 mm.) pieces.
  5. Wash and cut the red serrano peppers into thin pieces (optional).
Cooking Instructions
  1. Heat the wok over high heat before adding oil and then the red serrano chilies and garlic slices. Quickly stir fry to brown the ingredients before adding more oil and then the eggs. Scramble the eggs in the wok before adding pork. Quickly stir fry the ingredients together.
  2. Add the rice and the green onions to the wok. You may have to add more oil to the rice while stir frying. Finally add the Lee Kum Kee brand premium oyster sauce, or equivalent, and sesame oil to the wok and stir fry the ingredients together. Put the cooked ingredients into a serving dish and serve immediately.
