Salmon and Prawn Pasta

Sometimes you just want to eat some seafood. Salmon and prawns (also called shrimp in the USA) make a great combination together with pasta. Once the prawns are defrosted overnight, this is a quick-cooking dish to make. Pair the dish with Garlic Garlic Bread (the recipe can be found here).

Ingredients
½ - ¾ lb. Salmon, cut into 2-inch squares
10-12 31/40-sized Prawns, defrosted and shells removed
1 lb. Spaghetti, cooked al dente
8-10 oz. (about ⅓ of a bottle) Marinara Sauce
Red Wine to deglaze the pan (optional)
Olive Oil for cooking
Grated Parmesan Cheese for a topping (optional)
Preparation Instructions
  1. Defrost the prawns (also called shrimp in the USA) in a bowl of cold water in the refrigerator overnight and remove from the refrigerator at least one hour before cooking. Remove the shells from the prawns.
  2. Remove any bones and cut the salmon into 2-inch squares; set aside.
Cooking Instructions
  1. Put the spaghetti into boiling water and cook for the time indicated on the package or until the pasta is al dente. Reserve ½ cup of the boiling water after the spaghetti is done before draining the pasta into a colander.
  2. Heat a wok or pan over medium-high heat before adding olive oil and then the salmon. Brown the salmon on one side for about 1-2 minutes before flipping the salmon pieces over. Cook for another 1-2 minutes before removing the salmon from the pan to a bowl; set aside.
  3. Reheat the wok or pan over medium-high heat before adding olive oil. Add the prawns to the pan and cook for one minute or until the prawns become pink in color. Flip the prawns over and cook for another minute before removing the prawns from the pan into the bowl with the salmon; set aside.
  4. Reheat the wok or pan over medium-high heat before adding olive oil. Add the spaghetti to the pan and stir fry the noodles, coating them in the olive oil before adding the cooked salmon and prawns to the pan. Mix the ingredients together.
  5. Add the reserved spaghetti cooking water and the marinara sauce to the pan. Mix the ingredients together. The amount of marinara sauce added to the dish can be increased if more sauce is desired. Optionally add red wine to deglaze the pan and mix all the ingredients together.
  6. Put the spaghetti into a serving dish and optionally top with grated Parmesan cheese. Serve immediately with Garlic Garlic Bread (the recipe can be found here).
