Doubanjiang Bitter Melon Lamb (辣豆瓣酱苦瓜羊肉, Laat6 Dau6 Faan6 Zoeng3 Fu2 Gwaa1 Joeng4 Juk6)

Here’s another lamb stir fry dish using meat from the lamb loin chop. This recipe uses Doubanjiang, which is a spicy fermented paste made from broad beans, and bitter melon. When Doubanjiang is used, the sauce is usually “dry”, so you want it to cling to the ingredients with little or no sauce. The dish is made “backwards”, with the vegetables being cooked first, and the lamb with the previously stir fried Doubanjiang last.

More common (and cheaper) cuts of lamb can be substituted, such as lamb leg or shoulder. Lamb loin chops have two distinct pieces of meat separated by a bone as in a beef T-bone steak. The larger piece of meat is the loin and the smaller is the tenderloin. The two pieces of meat need to be removed from the bone, and then the loin and tenderloin pieces cut thinly using a very sharp knife. Meat from the lamb loin chop is very tender and even though there’s more work involved to prepare the meat for this dish, it’s worth the effort to make this dish if you can get the lamb loin chops for a decent price, otherwise use meat from the lamb leg or shoulder. You’ll need to purchase about 1½ lb. (750 g.) of lamb loin chops to get about ¾ lb. (375 g.) of meat after trimming.

Ingredients

Lamb loin chop meat (羊扒, joeng4 paa4), cut into thin pieces

Baking soda (蘇打粉, sou1 daa2 fan2)

Knob of ginger (, goeng1), crushed in a garlic press

Soy sauce (豉油, si6 jau4)

Shaoxing rice wine (紹興酒, siu6 hing1 zau2) or dry sherry

Hoisin sauce (海鮮醬, hoi2 sin1 zoeng3)

Shaoxing rice wine (紹興酒, siu6 hing1 zau2) or dry sherry
½ tsp.
2.5 ml.
Ground white pepper (白胡椒, baak6 wu4 ziu1)
½ Tbs.

Sesame oil (麻油, maa4 jau4)

Sichuan Pixiandouban Brand Doubanjiang
(郫縣豆瓣酱, pei4 jyun6 dau6 faan6 zoeng3)
  1. Prepare the lamb loin meat by removing the loin and tenderloin meat from the bone. From the two pieces of lamb meat, remove any silver skin and fat, and cut the meat into thin pieces using a very sharp knife. Wet with water and add the baking soda to the lamb, allow to tenderize for 15 minutes, and then wash the baking soda from the meat. The baking soda can be omitted but results in the tender meat experienced in restaurant dishes.
  2. Marinate the lamb in a covered container for at least one hour or overnight in the refrigerator with the ginger and garlic crushed in a garlic press, corn starch, soy sauce, hoisin sauce, Shaoxing rice wine or dry sherry, ground white pepper, and sesame oil. If marinating the lamb overnight, take it out of the refrigerator at least one hour before cooking.
  3. Pour boiling water over the dried Shiitake mushrooms in a heat proof bowl and rehydrate the mushrooms for at least one hour. Remove the Shiitake mushrooms from the rehydration liquid, remove the stems, and cut them into ½-inch (15 mm.) pieces. Reserve the rehydration liquid for later use in the cooking process.
  4. Wash and cut the bitter melon in half. Using a spoon, remove and discard the pith and seeds from each bitter melon half. Cut ½-inch (15 mm.) pieces from each bitter melon half. Wet the bitter melon pieces and add salt for 5 minutes to remove any excess bitterness. Wash the salt from the bitter melon. The amount of bitterness removed by the salt is proportional to the time before washing from the bitter melon. If you like more bitterness, the salt can be omitted altogether or the time reduced. If you like less bitterness, the time can be increased (after 10 minutes, most of the bitterness will be removed).
  5. Open the fried tofu package and discard any liquid. Cut the fried tofu into ½-inch (15 mm.) strips.
  6. Crush the ginger and garlic in a garlic press and put into a small bowl.
  7. Wash and cut the green onions into 1-inch (2.5 cm.) pieces on the diagonal.
  8. Put the Sichuan Pixiandouban brand Doubanjiang or equivalent into a small bowl.
  9. Prepare and mix the sauce in another small bowl: add the soy sauce, hoisin sauce, Shaoxing rice wine or dry sherry, ground white pepper, and sesame oil.

Cooking Instructions
  1. Heat the wok over high heat before adding oil and then the Shiitake mushrooms. Stir fry the mushrooms and then transfer to a bowl.
  2. Reheat the wok over high heat before adding oil and then the fried tofu strips. Stir fry the fried tofu and then transfer to the bowl with the mushrooms.
  3. Reheat the wok over high heat before adding oil and then the bitter melon. Stir fry to brown the bitter melon. Add the bowl with the ginger and garlic mixture to the wok, and then some oil to the mixture. Quickly stir fry all the ingredients until the ginger and garlic become fragrant, and then transfer to the bowl with the mushrooms.
  4. Reheat the wok over high heat before adding oil and then the Doubanjiang. Stir fry the Doubanjiang until it becomes darker (red) in color before adding the lamb. Stir fry to brown the lamb before adding the green onions and the contents of the bowl with the mushrooms back into the wok, and stir fry all the ingredients together.
  5. Add the rest of the sauce ingredients to the wok and mix the ingredients together. Put the cooked ingredients into a serving dish and serve with steamed rice.
