Grilled Tea Smoked Chicken (燒烤茶葉熏雞, Siu1 Haau1 Caa4 Jip6 Fan1 Gai1)

This is my version of tea smoked chicken using a marinated whole chicken and an outdoor barbeque grill. Any fragrant tea can be used for smoking, I happen to use oolong tea leaves. Tea smoking is usually associated with duck and done indoors in a covered wok, but chicken works just as well. In this case I used a whole chicken, but you can just as easily substitute chicken parts for the whole. I use my outdoor barbeque grill to cook the chicken because it’s so much easier (no cleanup) and the house doesn’t end up smelling of smoke (despite a good ventilation system over the stove). The traditional recipe for this dish has the unmarinated chicken (or duck) first steamed, then smoked, and then deep fried. When you eat this dish at a restaurant, that’s probably the way the dish was prepared, since the chicken or duck can be steamed well before being ordered, and then quickly smoked and deep fried before being served. The end result is a crispy tea smoked chicken or duck with succulent flesh.

My grilled version of tea smoked chicken doesn’t have the crispy skin that you find in the restaurant dish, but cooking the chicken is so much easier. The same ingredients used to tea smoke the traditional dish are used in the grilled version, except for the sugar. Sugar is one of the ingredients (amongst others) used in a foil packet to tea smoke the chicken. When a chicken or duck is tea smoked indoors in a wok, sugar can be used because of the short amount of time (maybe 10 minutes) needed to smoke the cooked chicken. Since I cook and tea smoke my chicken in a barbeque grill, the time needed to both cook and smoke the chicken is much longer (30-40 minutes), so the sugar burns and make the smoke acrid. So I leave the sugar out of the tea smoking ingredients when I use the grill.

I used a basic soy sauce marinade to grill the whole chicken. I put the chicken on a “beer can” stand to roast it upright in the barbeque. While I didn’t use a beer can to keep the chicken upright, I have an apparatus that has two rods attached to a pan that keeps the chicken standing while being grilled. The standing chicken is placed in the charcoal grate, without using the grill grate. The barbeque cover can’t be used if the standing chicken is placed on the grill grate in a 22.5 in. (57 cm.) barbeque grill, so that’s why the standing chicken is placed on the charcoal grate with the coals arranged around it in a circle.

Grilled Gochujang (Hot Pepper Paste) Chicken Breasts

Like the Grilled Gochujang (Hot Pepper Paste) Pork Ribeye Steaks recipe, I used Korean hot pepper paste (gochujang) and hot pepper powder (gochugaru) in a marinade for grilled chicken breasts. The amount of hot pepper powder can be varied depending upon your tolerance for spiciness. The hot pepper paste actually provides more sweetness to the dish than spice, so there’s no need to use hoisin sauce (my usual sauce used in marinades). Sake is also used in the marinade in place of my usual Shaoxing wine.

Los Angeles Style Korean Barbeque Beef Short Ribs - L.A. Galbi (L.A. 갈비)

Los Angeles style Korean barbeque beef short ribs, or L.A. Galbi, uses flanken cut beef short ribs and has its origins in Los Angeles’ Koreatown. Flanken cut means the beef short ribs are cut across the bone into thin strips. This cut of beef short ribs is readily available in the USA and differs from the galbi found in Korea (although according to Wikipedia, this style has made it back to Korea).
I made my own sauce for this recipe, as opposed to a store bought version used in my previous recipe, Korean Barbequed Beef Short Ribs (Kalbi). The secret to the marinate is using a whole pear in the marinade (together with Korean Fermented Soybean Paste – Doenjang - and Korean Hot Pepper Paste – Gochujang) which tenderizes the beef. The beef is marinated for at least 48 hours (the longer the better!) before cooking.

I used Korean hot pepper paste (gochujang) and hot pepper powder (gochugaru) in a marinade for grilled pork rib eye steaks. The amount of hot pepper powder can be varied depending upon your tolerance for spiciness. The hot pepper paste actually provides more sweetness to the dish than spice, so there’s no need to use hoisin sauce (my usual sauce used in marinades). This is a really easy and tasty way to grill pork chops (or any other meat).

Grilled Annatto-Rubbed Pork Rib Eye Chops

I purchased a package of annatto seeds from my local Asian market some time ago with the intention of using them in a dish one day and put them into my cupboard. I recently rediscovered the package and decided that I should really do something with them. I found this recipe, Annatto-Rubbed Pork Chops with Salsa Recipe at cookthink.com, and changed it into a grilled pork chop recipe (without the salsa). Annatto seeds give a distinctive color to a dish. For this recipe, pork rib eye chops are rubbed with a spice mixture after being marinated overnight in a soy based marinade that I usually use with the addition of lime juice.

Grilled Capsicum Wine Chicken Thighs (燒烤紅油辣椒酒鷄髀, Siu1 Haau1 Hung4 Jau4 Laat6 Ziu1 Zau2 Gai1 Bei2)

Ming Teh Food’s brand Capsicum in Red Oil provides a spicy addition to this grilled wine based chicken recipe. Capsicum is finely ground red chili and is sold bottled in oil. The spiciness of the dish depends upon the amount added to the marinade and is a personal preference, so feel free to increase or decrease the amount used. The spiciness of the chili with the red wine go well together in a soy based marinade. The dish is very easy to make and cooking time is fast if chicken thighs are used.

This is an easy to make grilled pork chop recipe using Koon Chun brand’s Barbeque Sauce. Hoisin sauce can be substituted if Koon Chun’s Barbeque Sauce is not available. Marinade the pork chops overnight, grill them, and then smoke using your favorite wood in a barbeque grill.

Grilled Korean BBQ Sauce Black Pepper Chicken (韓國燒烤醬黑椒雞胸肉, Hon4 Gwok3 Siu1 Haau1 Zoeng3 Hak1 Ziu1 Gai1 Hung1 Juk6)

This is an easy to make grilled chicken recipe using a bottle of prepared Korean barbeque sauce intended for beef. I’ve got a few bottle of Korean barbeque sauce in my pantry to use when I don’t feel like making my own sauce from scratch. Other ingredients are added to the marinade and the chicken is marinated for 24 hours before the marinade is discarded. Ground black pepper is then used to coat the chicken. If you’re really pressed for time, just use the bottle of Korean barbeque sauce and marinade for at least one hour before discarding the marinade, and coating with ground black pepper. The results won’t taste quite the same, but the chicken will still be tasty.

This is an easy to make grilled lamb chop recipe. The recipe uses the same marinade that was used in the Grilled Red Wine Turkey Wings (燒烤紅酒火雞翼, Siu1 Haau1 Hung4 Zau2 Fo2 Gai1 Jik6) recipe. The marinade is very simple and consists mainly of soy sauce and red wine, ingredients that are easily obtainable. While I didn’t add black pepper for this recipe, the lamb chops are even tastier if the lamb is coated with freshly ground pepper before grilling (after discarding the marinade).

Grilled Black Pepper Sauce Beef Loin Steak (燒烤黑椒牛排, Siu1 Haau1 Hak1 Ziu1 Ngau4 Paai4)

Black pepper sauce is the basis for this easy to make beef steak marinade. The steak can be marinated for as little as one hour, but ideally should be done overnight. Just make sure to turn the steak over halfway through the marinade time so that both sides of the steak are coated. If you’re really pressed for time or want to quickly coat the steak at the last minute, the black pepper sauce can just be used all by itself as a barbeque sauce. For the best results, choose a thick cut beef steak for a given weight so as not to overcook the beef.

Grilled Red Wine Turkey Wings (燒烤紅酒火雞翼, Siu1 Haau1 Hung4 Zau2 Fo2 Gai1 Jik6)

This is an easy to make grilled turkey recipe using just the wings. My local supermarket frequently has turkey parts, rather than a whole turkey, available and turkey wings are one of my favorite parts of the turkey to purchase. The wings cook surprisingly fast once the individual wings are separated and marinated before grilling. I also grill the wing tips, but can easily be omitted and used for stock instead. The marinade is also very simple and consists mainly of soy sauce and red wine, ingredients that are easily obtainable. While I didn’t add black pepper for this recipe, the wings are even tastier if the wings are coated with freshly ground pepper before grilling (after discarding the marinade).

Grilled Oyster Sauce Capsicum Lamb Chops (燒烤紅油辣椒蠔油羊扒, Siu1 Haau1 Hung4 Jau4 Laat6 Ziu1 Hou4 Jau4 Joeng4 Paa4)

This recipe uses lamb chops marinated overnight with a spicy chili oil and oyster sauce mixture. I use a bottled spicy chili oil that has ground bits of chili made by Ming Teh Food, but you can use any chili oil that’s readily available at your local Asian market. Combining the chili oil with oyster sauce produces a spicy and tasty combination when the lamb chops are grilled. Lamb chops are easily overcooked, so the lamb grilling and smoking time needs to be based upon the heat of your grill and previous experience. The trick is to quickly grill both sides of the lamb over a very hot fire before smoking.

Grilled Lemon Porterhouse Pork Chops

The principal marinade ingredient for this dish is lemon juice. Lemons add a nice bit of acidity to the pork chops and together with the herbs and spices, makes for a tasty grilled dish. The amount of salt to use is a personal preference; some people like more salt, others like less, and others prefer none at all. The amount of salt used in this dish will likely taste under-salted to most people, since that’s my personal preference. So feel free to adjust the amount of salt. For those that do not want added salt, more lemon juice can somewhat compensate for this.
The strategy to cook the pork chops is to first grill them to get the grill marks, and then smoke them to finish cooking. The thickness of the pork chops affects the cooking time, so you really want to purchase pork chops that are at least 1-inch (2.5 cm.) thick. If the pork chops are thinner, just adding the grill marks to both sides of the pork would fully cook them, and smoking them further would make the pork tough and dried out. So to be able to both grill and smoke the pork, try to purchase thicker pork chops (the thicker the better!).

Grilled Barbeque Sauce Turkey Breast (燒烤火雞胸肉, Siu1 Haau1 Fo2 Gai1 Hung1 Juk6)

I was able to purchase a single half turkey breast at my local market, rather than having to purchase a whole turkey. Grilling the turkey breast after marinating is my preferred method of cooking. I used an already prepared bottled barbeque sauce made by Koon Chun Sauce Factory that’s added to the marinade in place of hoisin sauce. The taste is fairly similar, so hoisin sauce is definitely a good substitute if you don’t have this particular brand’s bottled sauce. Depending upon the weight and height of the turkey breast, indirect cooking on the grill takes less than an hour. Cooking another turkey half breast at the same time takes no more cooking time on the grill and makes great a source for turkey sandwiches.

Chee Hou sauce is usually used as a flavoring ingredient in the Beef Flank and Tendon Stew (燜牛筋牛腩, Man1 Ngau4 Gan1 Ngau4 Naam5) recipe. The sauce is very similar to hoisin sauce, which can be substituted, but tastes just slightly spicier. For this dish, it is used as part of the marinade for grilled chicken.

Grilled Capsicum Chicken (燒烤紅油辣椒鷄, Siu1 Haau1 Hung4 Jau4 Laat6 Ziu1 Gai1)

The principal flavor in this dish is capsicum, which is a fancy way of saying ground chili, with red oil. The capsicum is more spicy than hot, so the flavor of the chilies are dominant in the marinade over any heat. The capsicum is suspended in red oil that also is a necessary part of the marinade. The oil takes on the flavor of the capsicum and adds to the marinades flavor.
